I seriously think I gained five pounds today.
Like stated on Facebook a couple days ago, I spent any entire day at work searching for Superbowl recipes.
For who, you ask?
Oh, are you having a Superbowl party?
.................No, we're not. Its just for us.
Earlier in the month, I found a chicken wing recipe in my Christmas gift slow cooker cookbook, "Fix it and Forget It" that I was super excited to try. I figured the Superbowl would be a perfect time to try it out since we didn't have any plans for the day. The recipe called for five pounds of wings and a normal person would think that that would enough food for two people. A normal person. Not me.

I don't know why I get in these "LET'S MAKE A FEAST" modes, but apparently its bound to happen every two months now. Along with the 5 lbs of wings, I decided to make buffalo ranch chicken dip (in my smaller slow cooker), fried pickles, and the heavenly delicious -- Reese's Peanut Butter Cookie Dough Dip -- a recipe I found on Facebook that I had written down before you could say "Fatty McGee"
The funny thing is that before I even buy the ingredients, I know entirely well that the leftovers will be overwhelming. There's no way we could eat that much food! But to be honest, its not just about the food.
Its something about listening to the Rat Pack on Pandora, cooking in the kitchen all day, and having Matt nearby to talk with and help out, if needed. Its going back to the simplicity of a marriage. No TV, no cell phones, no work, no running errands, etc. Just us. All day long. I'd like to say its our bonding time. These special Sunday moments that are so appreciated. That's why I have these feasts. For "Matt and Jaclyn time"
Anyways, the chicken wings were supposed to cook low and slow for eight hours, so right after church, I decided to start.
The recipe called for "Chicken wings with the tips cut off." I had absolutely no idea what that meant, so naturally, I youtubed it.
Seems simple enough, right?
WRONG!!!
Listen here, Stephanie Galligher - who said it was " pretty easy" -- You're full of it.
That shit is hard and disgusting.
I'm reminded of why I cooked vegetarian for three months. It was so gross......
I ran out of the kitchen twice. The first time -- when I accidentally cut through the bone and started to make the already dead chicken bleed more. And the second time, when I did it, again, and saw the blood all over my knife.
Gross Gross Gross!
And HOW I think I'll be able cook through Julia Child's cookbook that has a "simple" recipe titled:
Brains
Oh my god, no.
There was no way I was going to cut all of those chicken wings. I was already feeling woozy and sick to my stomach -- so -- Matt and I decided we'd cook them whole.
Yep.
Laugh away, ya'll
Happy I didn't have to cut wings.
In the slow cooker, we go!
6-8 hours later @ 165 degrees.
These were delicious and turned out great. Whole wings and all.
The buffalo ranch chicken dip recipe was stolen from a friend a work, but I found a rough draft to go off of while preparing it this morning. This recipe is so easy and amazing, it seems almost unbelievable.
Its definitely not healthy (canned chicken and 16 oz of cream cheese)
but all in moderation, right?
(coming from someone who has a bowl full of it as she types.....)
I was most nervous to fry the pickles. I had never fried anything before and was completely terrified that I would burn down our beautiful home.
Because of that, I pulled out our handy dandy fire extinguisher and read the directions
Disclaimer: EVERYONE should have a fire extinguisher in their kitchen. If you don't have one, go buy one right meow.

Luckily, I didn't burn down the house.
Although it was a pain in the ass to fry them.
I have much more respect for the Buffalo Wild Wings cooks and all those other people who do this on a daily basis.....
Matt says they're better equipped. Plus, ours were still good.

And, of course, I saved the BEST recipe for last.
Reese's Peanut Butter Cookie Dough Dip
Highly rich
Highly fattening
But so, so heavenly......
Because its so rich, the recipe suggested dipping salty pretzels in it.
YUM!
Matt and I had about 5 bitefuls and decided that we will be bringing this to work tomorrow for everyone else to eat, too. Otherwise -- the outcome and weight gain would NOT be ideal.
It was really, really good though.
The rest of the day, Matt and I sat around and waited for the game to start.
We bought a bottle of brandy and sipped on it (Wisconsin style!)
and watched.........

Goodness Gracious! It was so cute!
Ernie was unenthused...
And then demanded my immediate FULL attention.....
Oh yeah -- Isn't it Superbowl Sunday?? Shouldn't this post be about the Superbowl at least a little?
A few things:
1) I think Bruno Mars killed the half time performance. And I LOVE the fact that it had an "older style feel" to it (coming from the 26 year old who doesn't listen to any Hits and only music made 20 years before her time)
2) I do not like football, nor do I ever get into the game. But this year, I was hoping that the Broncos would win -- Only because Michael Strahan made a bet with Kelly Rippa on "Kelly and Michael" that if the Seahawks lost, he wouldn't cut his hair for an entire month -- (he normally cuts it TWICE a week....) And I think seeing Michael with an afro would be hilarious.
PS: I love "Kelly and Michael" in the mornings with a cup of coffee....
PSS: If the Seahawks win, Kelly can't wear makeup on the show this coming Thursday when she interviews George Clooney... almost as entertaining.
3) We LOVED American Family's commercial!

Russell Wilson is AmFam's spokesperson and the entire department has been so excited to see the American Family's Superbowl commercial.
FUN FACT: His wife worked in marketing at AmFam AND he played for the Badgers!
I almost cried watching it.
Because it was talking about dreams and trying to reach your goals and.... it was just so so good.
Oh, and I'm emotional wreck these days.
