And survived!! Definitely shocked the shit out of my husband and in laws, that's for sure. And on top of that -- we had an amazeballs time!
Half way into the night, I got a major mosquito bite on my forehead (about the size of a golf ball) which worked out perfectly in my protest that mosquitoes bite me more than anyone else (which is why I can't camp, obviously). My mom used to tell me its because I have sweet blood (because I'm such a sweet girl).....................
My father in law and husband laughed OUTLOUD when I told them that. What is that supposed to mean???!
We were able to spend time with the Fennel clan and visit with our adorable nephews. It was so nice to just relax with family for the weekend. We had such a great time that I may consider going camping again. MAY being the keyword..
Matt could not get enough with Grayson teething on the beer bottle.
I will admit that it was quite peaceful going to sleep with the crickets chirping and waking up with birds singing.
On Sunday, we joined my parents for dinner and went down the Rock River on my parents' pontoon. Our parents are our besties.
WE LOVE YOU.
Also, considering that it was sort of a mini vaca, Matt and I decided to splurge and go non-vegan a bit:::
Marshmellows
Pancakes
Chipotle mayo (with a veggie burger)
Tippy Cow's rum shots
Our stomach hated us for days.
In order to make up for it, I've cooked super vegan the past couple of nights:
VEGAN Pad Thai (**which is the first time we've had chinese food since MARCH) Oh my gosh, I've missed it so.......... IT WAS DELICIOUS!
And Lentil Loaf (a vegan meatloaf) -- I ran out of ketchup halfway into making the recipe WHICH TOTALLY RUINED IT. I am going to give this one another chance. It had some serious potential.
I have fallen in love with The Vegan Stoner cooking blog. Super duper easy recipes, less than five steps, and very few ingredients. OBSESSED.
